Today is day one of my 21 day fix group and I wanted soup. I had a bag of Trader Joe’s Roasted Cauliflower and decided to see what I could do with it. I have never made cauliflower soup before but I figured I could give it the old college try and see what I could do.  Here is what I did:

I took the whole bag of cauliflower and lightly steamed it in a saucepan for about 8 minutes.

Next I put the cauliflower into my Blendtec along with 2 cups of homemade cashew milk and 1/2 cup of water. I like my soups thick so just add more cashew milk and water to reach your desired consistency. You can also use stock instead of water and or milk.

Lastly I added 2 Teaspoons  of Trader Joe’s 21 Seasoning Salute, 2 Teaspoons of salt and 1 Teaspoon of Chopped Basil and then hit soup on my Blendtec.

I let this blend for about 3 minutes and TADA Roasted Cauliflower Soup. Seriously can it get any easier than that?

When it comes to soup tastes vary greatly. I do not like to heavily season my soups where Mike loves lots and lots of seasonings. I topped this with fresh basil but you could use any fresh herb you like.  You do not need to use Trader Joe’s frozen roasted cauliflower either but I do think you need to for sure use roasted cauliflower. To make your own roasted cauliflower all you need to do is line a pan with parchment paper. Place your cauliflower florets on the pan and drizzle it with some olive oil. I usually sprinkle mine with some sort of seasoning. I put mine in a 400 degree oven for about 10 minutes. Your oven might be set differently so just watch it carefully.
