Now that it’s SUMMER and the weather is heating up, I have been experimenting with all the fabulous fruits that are in season. I have been making desserts, popsicles, smoothies, acai bowls, etc. Basically anything cold and fruity and I’m there! Here is one of my new favorites. SUPER easy to make and PACKED with protein and yummy fruit.

What you will need:

  • ½ Pineapple

  • ¾ cup Frozen Mixed Fruit

  • 1 tbsp Chia seeds

  • 1 serving of a tasteless protein powder of your choice (such as egg white protein powder)

  • Unsweetened almond milk (however much you want for consistency)

  • 1 spoon of Raw Organic Honey

  • Ice (for consistency)

Step one: Halve the pineapple with a sharp knife and scoop out the insides and add to blender (PRO TIP: make slits in the pineapple with the knife and then use a metal spoon to scoop). Dump pineapple juices in too.

Step two: Add frozen fruit, chia seeds, protein powder and almond milk (in that order) to the blender.

Step three: Add the honey to the MIDDLE of the blender as much as you can, so it doesn’t stick to the sides. I use an ice cube to scrape if off the spoon! Add ice.

Step four: Blend and serve!

This recipe is also PERFECT for making smoothie pops with! To do that, pour the smoothie into a popsicle mold of your choice, plop in the freezer for about 3 hours (or until completely frozen), and when you are ready to eat them run the side of the mold under warm water to loosen the popsicle (so you don’t just pull the stick right out of it), and enjoy!
