Today just reeked soup to me when I woke up. I am not sure what it was but the chill in the air just made me crave soup. Making soup is one of the easiest things I think you can do in the kitchen. There are a few basic things that I always keep on hand to make simple soup. The first is a soup base. If I am not making simple soup then I will make my own base from scratch but lately with my crazy schedule simple soup seems to be the base of choice.  Here are the only two bases I use. I love them and I think they are the best out there nutritionally. (Of course like I said making your own is best)

1)Pacific Foods Organic Low Sodium Chicken Stock  AND

2)Pacific Foods Organic Roasted Red Pepper & Tomato Soup

 

Today I used the chicken stock. All I did was put my instapot (see my product review here) on sautee and cook up some sausage we got at the local farmers market. Mike is such a huge fan of this sausage I surprise him every once in awhile with it in soups. Then I add some frozen peppers I get from Trader Joes. I love the fire roasted ones the best. Have you ever tried these? They are so versatile. I use them in soups, egg dishes, pasta dishes and so many other things. Next I add some garlic cubes that I also get from Trader Joe’s.

Lastly I added in some fresh spinach I picked up from our local CSA (Community Supported Agriculture),then some sliced organic zucchini and lastly a carton of the chicken stock. I am careful with the seasonings because when you use any type of soup base, even low sodium it still has more than I like. Today I used Trader Joes 21 Day Salute, some basil and pepper. I did put a dash of sherry as well. I love sherry in stock soups. Then I put the whole thing on warm and let it sit till we were ready.

Well, is that simple or what?
