This is one of the recipes that Mike and I are enjoying on the Beachbody Ultimate Reset.  I have made this several times and I seem  to change it every time. The first time I made it it seemed very bland. I think adding more coconut aminos helped. I like it because it is very filling and it is very pretty as well. We normally enjoy this salad with a side of homemade hummus and fresh chopped vegetables. You could not ask for a healthier and more satisfying lunch. I hope you try  it and enjoy it.
