This is one of my favorite quick and easy pumpkin treats. Now is the season to pumpkinize everything. Did you like that word? 🙂 I try and use pumpkin in as many things I can. Pumpkin is a nutrition powerhouse. Did you know that in one cup of pumpkin you can get 245% of Vitamin A? In addition pumpkin is also rich in Vitamin A. I hope you like this super easy and yummy bar I created last night. It is 21 Day Fix Approved as well 🙂 but watch the portion size.

 

Grain Free Pumpkin Spice Bars

Ingredients

1/2 Cup pumpkin- 100% pure pumpkin only (1/2 Green Container for the 21 Day Fix)

1/2 Cup chilled almond butter(1/2 Green Container for the 21 Day Fix) Count as your teaspoons

1/8 Cup honey and 1/8 Cup Date Sugar (you can use all honey if you don’t have date sugar)

2 Teaspoons Pumpkin Spice

2 Teaspoons Hemp Seeds ( Count as your 21 Day Fix Teaspoons)

2 Teaspoons Pumpkin Pie Spice

1 Teaspoon vanilla

1/4 Teaspoon sea salt

1/2 Teaspoon baking soda

½ Teaspoon Allspice

Instructions

Preheat oven to 350.

Spray 8×8 baking dish with coconut oil.

Mix all ingredients until smooth and fully incorporated.

Pour into prepared baking dish.

Bake for 20 minutes, or until firm, and inserted knife comes out clean. Baking times vary per oven.

Allow to cool in dish.

Cut into 12 equal bars.

I did add a few dark chocolate chips on Mike’s side of the bars. He just loves chocolate and pumpkin together.
