Today I could not figure out what I wanted for lunch but I knew there was something I was craving. When I have a craving which is not often I know it usually is tied to some sort of Mexican food so I started there. I headed to the kitchen to see what I could whip up that would be compliant with the 21 Day Fix. I know for some of you going into the kitchen and staring at your refrigerator might be a nightmare but for me I love it. I love looking at all the food I have available and seeing what I can mix together and create. I was very happy with the creation for today’s lunch. Here is what I did.

I took two potapas tortillas (These are made from potatoes and are flipping amazing) 1 yellow

1/4 cup of organic shredded kale 1 green

2 tablespoons of pico de gallo

1 piece of yogurt cheese 1 blue

I sprayed the potapas with coconut oil and grilled them for about 2 minutes on each side. I then placed the yogurt cheese on one of the tortillas and added the shredded kale to the other side and grilled it for another 2 minutes. I finished it off by topping it with the pico de gallo. I still had some room in my blue and green containers so I made a small salad to go along with it. It was absolutely lovely and super filling. I love how you can be some creative with your foods with the 21 Day Fix.
