The house is split down the middle with this one. I was trying to create an eat clean high protein snack for Mike to have at work and came up with this one. Sadly Mike is on the side of thumbs down and Kristen and Kellie are on the side of thumbs up. I am slip down the middle. (It is the safe place to be)  I do like the ease of making this recipe and I also love the high protein ingredients. When Kellie first tried them she said they instantly made her think of the Samoa’s girl scout cookie.  Can someone please try to make them and let me know what you think? They are super duper easy.

Eat Clean Samoa Cookies (Gluten free, Grain Free and Raw)

1/2 scoop of chocolate shakeology

6 Medjool Dates (pitted)
1/2 cup raw almonds
1/2 cup raw cashews
1/4 + 3 Tablespoons (for the topping) cup shredded unsweetened coconut
2 T coconut oil
2 T water

Place all the ingredients (minus the 3 Tablespoons shredded coconut for the topping) in a food processor and pulse ill well blended. Next press the mixture into a 8 X 8 pan and place in the refrigerator for an hour. After and hour take them out and make cookie size round circles. Kellie used a round lid to make perfect circles. Next take a straw and make a whole in the middle of the cookie circle. Meanwhile take your extra shredded coconut and toast for about 2-3 minutes. If you are trying to stay 100% raw do not toast the coconut. (duh right?) Top each cookie with the shredded coconut. Keep in the refrigerator for up to one week.
