If you love granola as much as I do then you need to try and make it yourself. Not only is the store stuff expensive but it is loaded with oils and sugars you just do not need. Here is the thing, you can’t mess this stuff up. The hardest part of making granola is deciding what you want to use as your ingredients. I make at least one batch a week and it always varies.  Here is what I did today.

I took 1 cup of gluten free oats and placed them on a parchment lined cookie sheet. I added about 3 tablespoons chia and hemps seeds and mixed all of that together well. Next I took 10 brazil nuts ( these babies pack a great nutritional punch), 1/2 cup of cashews, 1/2 cup of walnuts and 10 macadamia nuts. and placed them in my food processor. I pulsed the processor a few times till I achieved the consistency I wanted. Sometimes I like it chunky but today I pulsed it a few more times to achieve a finer granola. It is whatever floats your boat. Lastly I spread all of the nut mixture on the cookie sheet and drop in 2 tablespoons of 100% pure maple syrup. You can use honey if you prefer for this step, I was out 🙁   I get down and dirty here and mix all of this together with my CLEAN hands. I like to mix it with my hands so I am sure to get that yummy syrup everywhere. I toast mine in the toaster over for 4-5 minutes but you can bake it as well on 375 in your oven.  You need to watch it and stir it once of twice so it does not burn on the top. ( You can add in dried fruit if you want to add some more PIZAZZ to your mix but do not add that till it is out of the oven)

Here are my favorite things to do with granola.

  • Top off my plain goat milks yogurt
  • Add it to my salad for some crunch
  • Eat it straight out of the mason jar
  • Place it on top of cinnamon broiled apples
  • Top off my strawberry coconut ice cream ( exercise portion control here )

You can make your granola gain free as well, just leave out the gluten free oats. I hope you try this, it really is amazing. Go crazy!
