Have you ever tried to make cashew cream before? Lately I have been craving this stuff and can’t seem to make enough of it. We eat mostly a plant based diet and try to include at least one raw meal a day.  This cream is not only dairy free but it is packed with the amazing health benefits of the cashew nut. Making zucchini pasta with cashew cream is probably one of my favorite things to make nowadays. You can make cashew butter sweet or savory depending on your cravings. In this video I went the  savory route but if you wanted to do the sweet route you can just add some vanilla, cinnamon, dates, honey or maple syrup.

To make the dish I used my spiralizer and made zucchini and parsnip noodles. I used one zucchini and one half of a parsnip. I placed a teaspoon of coconut oil in a pan and softly stir fried the noodles ( approx 5 minutes) If you want a completely raw meal then just do not cook the noodles. Next I placed some organic grape tomatoes under the broiler for 8 minutes. (Did you know to get the full health benefits of  tomatoes you need to cook them?)  Once the tomatoes were slightly charred I added them to the pan and gave it a good stir. I added some salt and pepper to the pasta mix and took it off the heat. Next I took 1 tablespoon of my freshly made cashew creme and mixed it into the pasta and tossed it well. The last thing I did was hurry to the table and devour it down.  The whole thing probably took me 15 minutes to make.
