Grain Free Waffles- It’s what’s for breakfast.
A normal breakfast for me consists of my daily dose of nutrition- Shakeology. I love Shakeology because first off it taste freaking AMAZING. I also love it because it helps me with my sugar cravings and also fills me up till lunch time. HOWEVER, today I was craving something I could sink my teeth into. Have you ever had one of those mornings were you just wanted to chomp? I can not tolerate gluten at all and I often struggle with oats so I had to search long and hard to find a waffle recipe that not only tasted kick ass but also was nutritious and one I could digest with ease. BINGO thanks to Against All Grain I was able to find one. I hope you enjoy this as much as I did. You will need a waffle maker. This is the waffle maker I use. I love it. I love to make savory waffles as well.
Grain Free Waffles
· 3 large eggs, at room temperature
· ½ cup coconut milk
· 3 tablespoons honey or maple syrup
· 3 tablespoons coconut oil, melted
· ½ teaspoon pure vanilla extract
· 1 cup raw cashews
· 3 tablespoons coconut flour
· ¾ teaspoons baking soda
· ¼ teaspoon sea salt
· ½ cup blueberries
Preheat a waffle iron to the lowest setting
Place all the ingredients in the order listed in a high-speed blender. Do not put in the blueberries yet. Blend on low for 30 seconds, then increase to high and continue blending until the batter is completely smooth, about another 30 seconds. Spoon the batter into the waffle iron, filling halfway and spreading evenly. Sprinkle a handful of blueberries over the batter. Close the lid and cook for 45 seconds to 1 minute, until the steam stops rising from the machine and the waffles easily release with a fork. Keep them in a warm oven while you finish making the rest of the waffles. I love to make a double batch of these babies. I often replace the blueberries with raspberries or whatever other organic berry I have handy. They are awesome to eat just by themselves. You do not need added syrup but if you are feeling wild and crazy – go for it just do not use that high fructose corn syrup crap 🙂
