Have you ever tried making a grain free stir fry? I guess I should really just call this “Everything but the kitchen sink stir fry” lol. Last night I was so tempted to grab Mike and head out to our local yummy pizza joint but we had so many fresh vegetables in the refrigerator I just could not do it. I knew I would feel way better with fresh vegetables in my tummy so I got to cooking. It was already really late in the afternoon and I was not prepared with a dinner menu so I just started throwing things in the pan and left it up to chance it was going to taste good. Have you ever done this? It was kind of fun. I cranked the music, poured myself a glass of wine and got to chopping. Mike and I were very thrilled with the results. Here is what I did.
I put a large saucepan on the stove and added in some chopped onions, garlic, bell peppers, mushrooms and asparagus. I sauteed this veggie mixture for about 10 minutes. Next I added about 1 cup of Trader Joes frozen cauliflower rice and cooked that another 5 minutes. (I love this stuff) Now this is when it got wild and crazy in the Malone kitchen, next I pulled out the spiralizer and spiralized 4 medium zucchinis and placed them in the pan. (Yes I dance when I do this- dont judge) While this mixture was getting all cozy together in the pan I cut up some organic grape tomatoes and placed them under the broiler for about 10 minutes. Always roast those tomatoes if you can, the lycopene is tripled when you cook them vs eating them raw. After the tomatoes were all caramelized I took the veggie mixture off the stove and added in the tomoatoes. I was not sure what to do for a sauce as I was not in the mood for my usual coconut amino’s stir fry. After a careful look of my pantry I finally picked up an avocado and put it in my food processor with a few garlic cloves. I blended this till it was very creamy. I then add this sauce to the veggie stir fry and plated it up.
Get creative in your kitchen. You do not need to have a formal recipe. You do not need do add grains to make a hearty dish. Trust yourself and just go for it.
PS Make sure you crank the music and pour a glass of wine too, it really helps. 🙂
