Ok I know what you are thinking, “What another chocolate chip cookie recipe, really?” But I am telling you when you start baking grain free you really have to keep experimenting. I am still not 100% with any of the recipes I have done. Getting the texture, taste and consistency down with this kind of baking is rough. Now do not be fooled, these are yummy and they did not go to waste but I am still working on that perfect recipe. These had a great chocolate taste but they were almost too moist for me. Here is the recipe, please let me know if you try it. I would love to hear what you thought. Sorry I did not put this in the pretty and organized recipe format I usually do. Its fourth of July and we are off to the beach !!!!!!
Grain Free Dark Chocolate Chip Cookies
- 2.1/5 Cups of Almond Flour or Almond Meal
- 2 Tablespoons Coconut Flour
- 2 Tablespoons Hemps Seeds (yes I put these in everything)
- 1/4 Cup of Coconut Palm Sugar
- 1/4 Cup of Honey
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Baking Soda
- 1 Egg
- 1/4 Cup of Coconut Oil
- 1/4 Cup of Unsweetened Applesauce
- 2 Teaspoons Vanilla
- 1/2 Cup Extra Dark Chocolate Chips
Pre-Heat over to 350 degrees. Mix all the wet ingredients in the food processor then slowly add the dry ingredients. Hand blend in the dark chocolate chips. Place rounded teaspoon size balls on a parchment lined baking sheet and bake for 8-10 minutes. Cool completely before moving as these can be pretty fragile.
