Grain Free Peanut Butter Cookies are sure to be a hit with everyone I promise ๐Ÿ™‚

I am heading to a lunch tomorrow and I am suppose to bring cookies. I always struggle with this because I bake pretty healthy lol and not everyone enjoys a cookie without sugar. This cookie is a great compromise I think.

They do have some sugar I got to be honest. Its all about the balance right? ๐Ÿ™‚ I rarely have sugar and if I do I use the most natural form I can find. I used raw organic sugar and only used 1/2 of a cup. The raw sugar does give the cookies a little crunch which I think is pretty cool.

I like to make a double batch of these and stick some in the freezer.

Grain Free Peanut Butter Cookies

1 Cup of Peanut Butter- Please do not use the stuff with the hydrogenated oils in it ๐Ÿ™
1/2 Cup of Raw Sugar
8 Pitted Dates ( I blend them into a paste in my blender first)
1 Egg
1 Tsp. Baking Soda

Dark chocolate chips are optional. I don’t like them with chocolate chips but we all know Mike needs his chocolate. I did 1/2 without them ๐Ÿ™‚

Instructions: Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper.
Mix the pitted dates in a blender to ensure a good even blend of the flavor. Next add the rest of the ingredients ( minus the optional chips) into a food mixer. Once the mix is blended fold in your chips if you are using them. Drop teaspoon size cookies on your prepared sheet. Use a fork to make your criss cross design. Bake for 8 minutes. Please let these cool completely before you take them off the sheet, they are very crumbly when hot.

Enjoy, only eat one MAX 2. They are rich and will do the trick.
