I woke up this morning craving something other than my normal Shakeology drink.  I recently did one of Beachbody’s newer programs The 21 Day Fix Extreme and the Gluten Free Pancakes recipe was one of my favorite recipes from the program. These gluten free pancakes are really dense so you really do have to focus on the portion size. The first time I made them I made them too big and I was so bloody full. I love these gluten free pancakes because they are filled with nutritious ingredients and they taste delicious.  One of the ingredients is cashews!! Who would have ever thought of putting cashews in the gluten free pancake mix.  As many of you know, gluten free options are a must in our house.

I am a huge fan of The Original 21 Day Fix Program.  I am always running challenge groups for this program because I think it is a game changer for everyone.

There are a few versions of this 21 Day Fix pancake. Both of these gluten free pancakes are pretty similar but yet have a different taste. The cashews in the above recipe give the pancakes a denser feel but add a touch of sweetness.

Gluten Free Banana Oat Pancakes

21 day fix breakfast- All in the Balance

1 Cup Unsweetened Almond Milk
2 Large Eggs
1 Ripe Banana
1 Tsp. Vanilla Extract
1 Tsp. Baking Powder
1/2 Tsp. Cinnamon
1 Dash Salt
2 Cups Gluten Free Old Fashioned Oats OR you can can use Buckwheat Groats 
1/2 Tsp. Coconut Oil
3 Cups Berries

Directions

Place almond milk, egg, banana vanilla, baking powder, cinnamon and salt in a high speed blender. Blend until smooth. Heat oil in a nonstick pan. Pour 1/4 cup of the batter onto the skillet. Cook them for about 2-3 minutes or until they start to bubble on top. Flip and cook the other side.  Top with the berries. These freeze well.
