Lately I have been having a lot of steel cut oatmeal for breakfast and was craving a change. Last month Mike and I had the opportunity to attend the Natural Products West Expo and one of the products I discovered was Bob Mills Gluten Free Muesli. It was amazing but I do not like to eat a lot of packaged foods so I ventured out to make some of this yummy mix on my own. The wonderful thing about Muesli is you can mix in anything that is suiting your fancy at the time. It is a very versatile breakfast mix. Here is what I created on my first go round:

Dry Ingredients
2 Cup of Gluten Free Oats
1/2 Cup chopped Brazil Nuts
1/2 Pumpkin Seeds
1/4 Walnuts
2 TLBS Pure Maple Syrup

Wet Ingredients
1/4 Cup Chopped Dried Pineapple
1/4 Cup Chopped Dates
1/4 Organic Raisins

Preheat oven to 400 degrees. Place all Dry ingredients on a pan and coat with the maple syrup. Leave in oven till toasted, about 15 minutes. Stir often to prevent it from burning.
When toasted to your liking take out of oven and toss in wet ingredients. When cooled store in an air tight bag.

Get creative and use whatever ingredients you fancy. Get wild and crazy with this one.
