Gluten Free Christmas Crack is not a recipe I would normally post but it’s the holiday and I had a friend request it so no judgement. Balance Baby! I have to admit it was pretty tasty. The thing with these types of recipes is you must exercise portion control or you will crash quickly from the sugar. If you are not someone who can have one bite and put it away do not make this. 🙂 I did the best to minimize the sugar content but let’s be honest, this is not an all natural treat. Gluten Free Christmas Crack
2 Cups of Gluten Free Pretzels – I used Snyders
2 packets of Gluten Free Table Crackers – I used Schar’s
1/4 Cup of honey
1/4 Cup of Pure Maple Syrup – You can use brown rice syrup if you have this. I was out 🙁
1/2 Cup of Ghee or Butter
1 Cup of Dark Chocolate Chips – 70% cocoa please 😉
1 Tsp of Vanilla
1/8 Tsp of Baking Soda
2 Tsp Course Sea Salt
Optional: If you are taking this to a party you can break peppermint candies and use them as a topping.
Preheat the oven to 350 degrees.
Line a cookie sheet or large shallow pan with parchment paper.
Place the pretzels and crackers on the pan. Try to spread them out so they are not on top of each other.
In a medium saucepan melt the butter, honey and maple syrup/rice syrup. Once it starts to boil continue to stir it for 5 minutes. It should be a gentle boil not a rolling boil. This needs to be stirred consistently. As it nears the end it will get a rich brown color and start to pull away from the edges of the pan.
Take the mixture off the heat after the 5 minutes of gentle boiling and stir in your vanilla and baking soda.
Pour the mixture on top of the pretzels and crackers. You do not need to worry about covering every nook and cranny. Once it is in the oven the mixture will spread.
Place the pan in the oven for 5 minutes.
While the Gluten Free Christmas Crack is in the oven you need to prepare the chocolate. You have two options here. You can melt the chocolate chips in the microwave or over a double broiler or place the individual chips on the crack once it is out. I just threw the chips on after I took it out of the oven.
Lastly take your salt and sprinkle it over your Gluten Free Christmas Crack.
Place the pan in the refrigerator for about 10 minutes so it can set up and get hard.
Take the pan out and break it up into the size pieces you enjoy.
