I love something with my morning coffee, always have and probably always will. I use to have 1/4 of Quest bar then I realized how stupid that was to start my day with a processed food. I love to get in the kitchen so there is no excuse for not having a homemade bite vs a commercially packed bar. (Do not get me wrong I still love Quests bars in moderation) These are two of my favorites things to make right now.
Gluten-Free Banana Bread
Total Time: 1 hr. 8 min.
Prep Time: 20 min.
Cooking Time: 48 min.
Yield: 12 servings, 1 slice each
1¼ cups almond flour
1¼ cups gluten-free all-purpose flour
1¼ cups old-fashioned rolled oats, gluten-free
½ tsp. sea salt (or Himalayan salt)
2 tsp. baking soda
¾ tsp. baking powder
½ tsp. ground cinnamon
6 large ripe bananas, mashed
1 tsp. pure vanilla extract
1 large egg, lightly beaten
3 Tbsp. extra-virgin organic coconut oil, melted
½ cup pure maple syrup
¼ cup unsweetened almond milk
Nonstick cooking spray
1. Preheat oven to 350° F.
2. Combine almond flour, flour, oats, salt, baking soda, baking powder, and cinnamon in a large bowl; mix well. Set aside.
3. Combine bananas, extract, egg, oil, maple syrup, and almond milk in a medium bowl; mix well.
4. Add flour mixture to egg mixture; mix until just blended.
5. Place batter in loaf pan that has been lightly coated with spray.
6. Bake for 43 to 48 minutes, or until toothpick inserted in the middle comes out clean.
7. Cool completely before slicing.
Have you ever heard of the JuJube fruit? (sometimes called the Chinese Red Date) The JuJube is not around very long in the year and they are often hard to find. We get them from our local CSA and only a few times a year. These cuties are chock full of healthy goodness. Check out these facts about this delightful little unknown fruit.

Yield: 12 servings, 1 muffin ea.
2 cups almond flour
1 teaspoon baking soda
1/2 cup chopped JuJuBe fruit. You can make a paste out of it if you prefer, you do this the same way you would make date paste. I just put mine in the chopper and made small pieces.
3/4 cup unsweetened apple sauce
1/4 cup butter ( I used vegan butter)
4 tablespoons melted butter
1 tablespoon pure vanilla extract
1 tablespoon ground cinnamon
1 teaspoon ground allspice
1 teaspoon ground cloves
1/2 cup of raspberries or any other fresh fruit
Optional- I topped mine with my homemade grain free granola. You could also just do shredded coconut.
Salt as needed
Keep in mind that these have ZERO added sugar so you might want to go heavy on the spices. Do not be tempted to add sugar PLEASE
Preheat the oven to 350º. In a large mixing bowl, thoroughly combine all of the ingredients. Pour the batter equally into a paper-lined muffin tin. They should be approximately three-fourths full.
Bake for 15 minutes, rotating the pan halfway through. Remove from the oven and let cool for five minutes, before removing the muffins from the pan to a wire rack. Serve warm
