I love to make Buddha Bowls but gosh darn it if I am not stuck on ideas. I feel like I add the same things and the same dressing every time. Today I wanted to do something different and different it was indeed.
Dairy-Free Green Goddess dressing is zesty, full of flavor and the perfect topping for a Buddha Bowl.
Dairy-Free Green Goddess Dressing
1 cup unsweetened cashew yogurt- I used Forager brand
1 cup fresh parsley
1 cup fresh mixed herbs, I used basil, sage and oregano
2 tablespoon chopped chives
1.5 tablespoons lemon juice
1 tablespoon extra virgin olive oil
2 teaspoons capers- optional but really good
1 garlic clove
¼ teaspoon sea salt
Freshly ground black pepper
The instructions are pretty simple. Throw all of the ingredients in your high speed blender and push GO! After the dressing was blended up I put it in a mason jar and let it sit in my refrigerator for about an hour. This step is not necessary but it helps the flavors gel together.
The Buddha bowl above is made with brown rice, cucumbers, pickled onions, stuffed olives, cauliflower, tomatoes, avocado and garbanzo beans. I used about one tablespoon of the Dairy-Free, Green Goddess Dressing to top of the bowl.
Another way I like to use the Dairy-Free Green Goddess Dressing is on top of a bed of lettuce.
