This cucumber and tomato recipe totally surprised me I have to be honest with you. I am not a huge tomato fan, I like tomatoes in small quantities and normally I just like them roasted. As some of you know Mike and I and a few other challengers are doing the Beachbody Ultimate Reset. So far we are all loving it. One of the best things about The Beachbody Ultimate Reset is trying out new recipes. We did The Beachbody Ultimate Reset 4 years ago and had amazing results. It is funny because some of the recipes that I did not enjoy back then I love now. It just goes to show you that you should always play around in the kitchen and never say never to a food group or recipe.

This recipe is filled with flavor and was even better the next day. Thankfully while on The  Beachbody Ultimate Reset you have the opportunity to repeat some of the recipes you enjoyed. This is one we definitely enjoyed.  For those of you that are following the 21 Day Fix Portion Control Eating Plan you will want to bookmark this recipe. It would be 2 Greens and 1 tsp. I will use this one when we do Hammer & Chisel next month since with we use the 21 Day Fix Portion Control Eating Plan with this workout program.

Cucumber and Tomato Salad
Ingredients
2 Tbsp. red wine vinegar
1 tsp. balsamic vinegar
1 Tbsp. fresh lemon juice
2 tsp. extra-virgin olive oil
1 medium cucumber, partially peeled, halved lengthwise, sliced
1 cup cherry tomatoes, halved
1 Tbsp. chopped red onion
1 Tbsp. chopped fresh Italian parsley
1 Tbsp. chopped fresh basil leaves
Himalayan salt (to taste; optional)
Herbal seasoning blend (to taste; optional)

Directions
1.Combine red wine and balsamic vinegars, lemon juice, and oil in a small bowl; mix well. Set aside.
2.Combine cucumber, tomatoes, onion, parsley, basil, salt (if desired), and seasoning blend (if desired) in a large bowl; mix well.
3.Drizzle dressing over cucumber mixture; toss gently to blend.
