Cheesy Cauliflower Breadsticks dare I say any more? For real friends, these blew me away. Over the last few years, I have made a lot of things with cauliflower and nothing has ever tasted or turned out as well as these guys. I am already plotting out the next batch I am going to make and who I am going to share them with. Cooking with cauliflower can be very tricky. For those of you that have not tried it before do not be afraid of it just know the trick is wringing out the moisture from the cooked cauliflower. I did not pick up on this tip my first few batches of cauliflower crust pizza but now I get it. These cheesy delights not only tasted amazing they also held up perfect and were very easy to handle. Sometimes with the pizza the crust gets so soggy because of the toppings it just falls apart. I had an open jar of spaghetti sauce so I used this to dip the breadsticks in but next time I think I will use the recipe for marina sauce that is in the Fixate Cookbook. I actually found this recipe on Beachbody’s Club On-Demand Fixate Cooking Show. I modified a few things but still kept it fix approved.
Cheesy Cauliflower Breadsticks
Nonstick cooking spray
3 cups cauliflower florets
3/4 cup goat feta cheese – I get mine from Trader Joes
1/4 cup + 1 Tbsp. grated Parmesan cheese
1/2 tsp. + 1 pinch sea salt or Himalayan salt
2 large eggs, lightly beaten
1 Tbsp. ghee (organic grass-fed, if possible)
1 clove garlic, finely chopped
1 Tbsp. Pesto Parmesan seasoning (you can use any seasoning you like)
1/2 cup FIXATE marinara sauce. I used spaghetti sauce because I had it opened.
Preheat the oven to 400 degrees.
Line a 6 x 8 in. dish with parchment paper.
Place cauliflower in food processor and pulse till it looks like rice
Microwave or steam the cauliflower for about 2-4 minutes.
Transfer the HOT ( be careful ) cauliflower to the cheesecloth and squeeze out the water. You can do this over the sink or over a bowl. Be very careful as the cauliflower will be very hot. I mean VERY hot. You can also use a heavy clean kitchen towel if you do not have cheesecloth.
Combine all the ingredients ( except the ghee and garlic) and mix in a food processor or by hand in a big bowl. I used the by hand method so I did not over mix anything.
Transfer the mix to the prepared pan and spread evenly.
Bake for 20-25 minutes or until it looks like it is set up and firm.
Take it out and set aside.
In a small pan over low heat melt the ghee and garlic. Once you can smell the garlic take it off the heat and brush the cauliflower mixture with it evenly. You can add another tablespoon of parmesan cheese if you want.
Put it back in the oven for about another 5 minutes.
Allow it to cool completely then slice it into eight 1 x 6-inch sticks.
