Green Lentil Lasagna

Today it was all about “What Can I Throw Together for Lunch?”  Some of my favorite times in the kitchen are when I do not know what to make or have a recipe to follow.  This lasagna consists of:

  • Explore Cuisine Green Lentil Lasagna Sheets
  • Mushrooms, onions, garlic, broccoli, celery and peppers
  • Trader Joe’s fire-roasted canned tomatoes and a little tomato paste
  • Shredded mozzarella cheese


Do not get all wiggy about directions or ingredients. Just GO FOR IT 🙂  I started with the tomato/tomato paste layer, then added a few green lentil sheets, then some cheese and then I repeated it till I ran out of ingredients. I cooked it for about 20 minutes on 400. 

Note: Next time I will add more tomato sauce to make it a little saucier.

These homemade Birch Benders Muffins are the bomb! They are so easy to make and you can really get creative with the ingredients.  Our local Costco carries the Paleo and the Keto mixes.  As always I like to find a recipe that looks good and then I like to mess with it lol. I always enjoy putting my own spin on things. Sometimes it works and sometimes it is a complete flop.

Today I decided to use some berries that I had in the refrigerator.  You can use frozen berries as well.  Mike is a freak for chocolate so I mixed half of the batter with dark chocolate chips and walnuts and made the other half with the fresh berries.  You can truly get creative and add whatever you want.

The Paleo mix does have a little monk fruit in it. I do not like monk fruit but it is only a little. The Keto mix does not have any sugar alcohols but it does not create the same texture in the muffins. Next time I am thinking of combining them and see how that comes out. I love me a good experiment.

2 Cups Birch Benders Paleo Pancake & Waffle Mix
3/4 Cup Water
1/4 Cup Pourable Ghee Oil
1/2 Cup Chia Seeds
1 1/2 Cup Blueberries, fresh or frozen wild
2 Tablespoons Cinnamon
1/4 Cup Maple Syrup


  1. Preheat oven to 350°F, and line or grease a muffin tin.
  2. Toss blueberries with cinnamon.
  3. Combine Birch Benders, water, chia seeds, ghee and maple syrup. Fold in blueberries.
  4. Scoop batter into lined muffin tin.
  5. Bake 35- 40 minutes until a toothpick inserted in the center comes out clean.
  6. Let rest 5-10 minutes before enjoying!

These gluten-free low carb bagels are the perfect side dish to any meal. You can top them with nutbutters, avocado, grilled meat, cheese, cream cheese or whatever is in your refrigerator.

You can make these savory or sweet. I made some with everything bagel seasoning and also some with cinnamon and nutmeg. Get creative.

Now, I do want to reiterate that these are not crunchy bagels. However, they are cute and they can work as a low carb sandwich bread.  I pack some of these for Mike in his lunch. I top them with avocado, grilled veggies and sometimes yummy cream cheese. They do hold up well when you pack them for lunch.

If you are looking for a quick healthy treat for tonight you must try these. They are UBER simple.  

I do not have a recipe because I just kinda threw everything together but you can do the same thing and they will come out fab.

I used dark chocolate ( 72% ), MCT oil, dates and macadamia nuts. See the video for more info 🙂  


Make sure you put your pitted dates on parchment paper! Another hint is if you want the chocolate to dry quickly then lay the parchment paper on something you can easily put in the refrigerator. You can also leave them on the counter to dry but it tends to take a lot longer and Mike never has the patience for that!

I use about 1/2 cup of melted chocolate, 6 whole dates then pit them and cut them in half, 12 macadamia nuts, and 1 tablespoon of MCT oil. You can use any type of chocolate you want but I love the Big Pound Dark Chocolate Bar from Trader Joe’s

Make sure you check out Garden of Eden Organics for the dates. I have not found any dates that even come close to theirs. They do not always have their dates on the site so just email them.  ( PS ) for those of you that are local to Southern CA- they deliver for free 🙂

Is your smoothie helping or hurting you?

In my opinon there are two HUGE things that can make your smoothie work against you and we have all probably done it recently. 

1- Using too much fruit. Fruit is yummy and so good for you but too much can quickly turn your healthy shake into a candy bar. 

2. Overfilling your blender with too many ingredients. In today’s world, we are consistently being sold  bigger is better and honestly, this is just not true even with healthy food. There is no reason to put so many ingredients in your blender that the lid BLOWS off. YES, we have all done it, admit it.  The two biggest reasons we should be keeping our ingredients size in balance are A- our bodies cannot digest all that food at one time. You will end up with the bloats and a gassy tummy.  B- You flat out don’t need 2 apples, a head of celery,  3 scoops of protein powder ( etc you get my drift ) to make a healthy meal. Experiment with your ingredients and see how you feel.  Be mindful of what you put in and you should be OK. BE logical and do not try to achieve a weeks worth of nutrition into one smoothie.

I usually start my smoothie with some sort of base. I either use Shakeology or a Pea Protein Powder.  If I am not using the smoothie as a meal replacement I just use a little almond milk as my base.

Next, I add in about 1 cup of frozen fruit. I always freeze my leftover 

fresh fruit, no fruit ever goes to waste at my house 🙂 The rest of the smoothie is really according to my taste buds or what I have on hand. Some of the things I add in are:
Hemp Seeds ( excellent source of healthy fats )
Chia Seeds ( good fiber and magnesium )
Maca Powder ( excellent hormone balancer )
Frozen Cauliflower ( Adds nutrition without messing with the taste )
Baobab ( high in vitamin c and much more )
Collagen ( Great for skin and joint issues )

Lastly, if I am feeling I want some extra fat and protein I add in 1 tablespoon of natural peanut butter.  

Note: I do not ever need to add ice ( which is useless flavor ) because I have the frozen fruit or frozen cauliflower to make it thick.


Smoothies are a fab way to get some nutrition into your body when it needs quick fuel.  They are tasty and can be made quickly and affordable. Just be smart and pay attention to what you put in and how much you put in.

I am always on the hunt for quick things I can make for breakfast or lunch. Ideally, I would always be in the kitchen with a smile on my face whipping up a tasty homemade meal but that shit any REALZ! I love to cook and do it 80% of my meals but sometimes you just need a little help. These thins and pizza crusts from Outer Aisle Gourmet are a huge find for our household.
