Brrrrr baby its cold outside. Seriously, I live in California and I am so dang cold. I realize we have it way better here but this gal is a California native so this weather is a bit much for me.  Soups, soups, soups, seems to be on my menu many times a week.  There is no better way to create some inner warmth then with a bowl of pipping hot nutritious soup.  In addition to the warm feeling soup gives you going down studies also indicate that when you start your meal off with a bowl of soup you will consume less calories with your meal.  Count me in. This is one of my favorite super quick soup recipes. I am blown away by the flavor in this soup.

Zucchini-Cashew Soup

What you need:

3 medium zucchini, cut into chunks and steamed, preferable organic

17 raw cashew pieces

1.5 cups of bone broth or water

Himalyayan  or truffle salt, Bragg Liquid Aminos or Coconut Aminos (to taste)

Herbal seasoning or fresh herbs, like basil or dill (optional to taste) You can add some steamed veggies (optional for chunky like soup)

What to do:

Soak cashews in enough water to cover for 1 hour; drain. Combine cashews, zucchini, broth/water and seasonings in blender and mix until smooth, adding water/broth as needed for desired consistency. Pour into saucepan and reheat gently, but do not over boil. For chunky soup, add steamed chopped veggies of  your choice. This can also be served cold.

Serves 1 (I usually make several servings at once)

Honest engine this is one of my families favorite soups. It is healthy, filling and darn right tasty.
