Its Friday night, I am tuckered from a long day at work, and I am hankering for a quick fresh meal to go with my cold glass of sauvignon blanc. Bruschetta is always my go to snack when I want something healthy, simple and refreshing. Fresh basil is truly one of my favorite herbs ever. The leaves are so aromatic. I could just whiff this beautiful herb forever. I know that sounds weird but honestly I love love love fresh basil.

If you search the web you could find  a lot of different recipes for bruschetta but they all generally have the same key ingredients.

Sliced bread or heavy crackers

Fresh mozzarella cheese

Fresh Basil

Tomatoes

My favorite way to make it is as follows:

  • Sliced gluten free flatbread slightly toasted (I get mine from So Good Gluten Free)
  • Slice of fresh mozzarella cheese
  • thin slice of organic roma tomato
  • 1 fresh basil leave

After I stack all the ingredients in the order written above I top each off with a little balsamic glaze (I get mine from Trader Joe’s)

This snack will never get old. Mike and I always fight over the last one.
