It is about time this green cruciferous vegetable got some more exposure. Cauliflower has been all the rage lately and I do love this veggie but I am excited to see broccoli come back and make a presence. I discovered this fabulous recipe while doing my Country Heat Challenge. Autumn Calabrese is the owner of this recipe so I need to make sure she gets all the credit 🙂

The crust is made out of broccoli, mozzarella cheese, parmesan cheese, eggs, salt, garlic, and basil. Sounds pretty yummy and pretty simple right? Yep, it really is, the first time I made it I was so happy with it. I have made cauliflower crust pizza many times and trust me it does not come out a success each time.

So does this taste like Pizza Hut Pizza? Um DUH- NO! But do you want Pizza Hut Pizza? The fat, calories and chemicals that top off your typical delivery style of pizza is off the charts HORRID for you. This crusts main star is broccoli. Broccoli is a magical vegetable that is chock full of so many great things but some of its best highlights are Vitamin K, Folate, Vitamin C, and fiber. Are you ready to try it? I hope so 🙂

For the crust:
Parchment paper
Nonstick cooking spray
3 cups raw broccoli florets
Hot water
1/2 cup shredded, part-skim, low-moisture mozzarella cheese
14/ cup grated Parmesan cheese
2 large eggs, lightly beaten
1/2 tsp. sea salt (or Himalayan salt)
1 clove garlic, finely chopped
1/4 cup finely chopped fresh basil leaves

For the topping:
1 Tbsp. extra-virgin olive oil
2 large eggs, lightly beaten
1/4 cup shredded, part-skim, low-moisture mozzarella cheese
1/4 cup sliced mushrooms
1/4 cup sliced red bell pepper
