Here is a quick and EASY dairy free eat clean treat for you to check out. I am not kidding when I say EASY and YUMMY. You can get creative with the toppings as well. I used blueberries but I would guess you could use any other frozen fruit. You could even just use bananas but in my opinion life is short- live it up and get creative 🙂
Banana Blueberry Dark Chocolate Bon Bons- Dairy Free
- 3 medium ripe bananas, frozen – If you do not already have any frozen just stick them in the freezer now and give it about an hour. They might take longer to set up after but its doable
- 1/4 cup of frozen organic blueberries. I love the sweetness and color of adding blueberries. Of course, you do not have to use organic but these beauties are heavily sprayed so organic is best
- 1 teaspoon vanilla extract- Please use the real stuff, none of that imitation crap
- 8-9 ounces’ dark chocolate- now you can use 1/2 cup of semi-sweet chocolate chips if you only have those BUT dark is the best and anything over 72% is the very best
- ¼ cup coconut oil- you don’t need to melt it first
In regards to toppings, get creative. I love to use hemp seeds, unsweetened coconut shavings, sliced almonds, and diced macadamia nuts. You will want to have about 5-7 tablespoons of these toppings. Have them all ready and on the counter 🙂 Next take some parchment paper and cover a large plate. You will put your bon bons on this plate.
Now the fun starts. Get those frozen bananas and frozen organic blueberries out and place them in a high-speed blender or a food processor. Add in your real vanilla, you can also use any other real flavoring you want or even leave it out if you do not have any. Blend it all up till it gets creamy looking, kinda like peanut butter. Next grab a small ice cream scooper. (these are my favorite scoopers, I use them for everything) and scoop out small balls and place on the plate. If you do not have a scooper (you should really get those though 🙂 You can use a spoon. I make my bon bons bite size so I use the small scoop. You want to work quick so the fruit mixture does not melt. Once all the mixture has been used put the plate with the bon bons into the freezer and leave them there for AT LEAST 3 hours. Do not rush this or you will have sad looking bon bons when you add your chocolate.
Once your bon bons are almost 100% set up you can start melting your chocolate. It is always best to melt chocolate in a double broiler. If you do not have one you can use a microwave just make sure you stir it often. Once the chocolate is 50% melted add in your coconut oil and stir. Keep stirring till all the chocolate is melted then take it off the heat and let it cool down for about 10 minutes. While the chocolate is cooling, you can get your toppings all ready. Do not pull out the bon bons till you are 100% ready, they melt fast.
Now look through all those kitchen drawers for a bamboo kabob looking like stick. You want to find something you can use to dip the bon bon in the chocolate. If you do not have any its cool just use a spoon to put the chocolate on.
Go get those bon bons and lets make magic.
Carefully pierce the bon bon with the stick and submerge it into the dark chocolate, you want to cover the bon bon completely with chocolate. You can also use that spoon to pour the chocolate on the bon bon. Place the bon bon on the parchment lined plate and while the chocolate is still wet add some of your fun toppings on the very top. You need to move fast so those beauties don’t melt. It took me about 10 minutes to do 12. Do not worry about making them look pretty, they will trust me. Once they are all done put them back in the freezer for at least 2 hours. After about an hour you can place them in an air tight container and store them that way till you are ready to eat them. They need to be in the freezer at least 2 hours! Do not get ancy.
These things have been a hit with all age groups, every single time. They do get messy because dark chocolate melts easy so bring napkins. I know this sounds daunting but trust me it is so easy and so so SO good. Let me know if you try them.
