I woke up today and wanted something to go with my rich cup of dark roasted coffee but my pantry was looking pretty scarce. What I did have was a few ripe bananas so my mind got to thinking…… what could I do with these beauties? Of course I could have thrown them in a bag and put them in the freezer as I love frozen bananas in my Shakeology but that was not what I was craving at the moment.  Instead here is what I did.

I took the two ripe bananas and placed them in my food mixer.  ( peeled of course-LOL)

I then added 1/4 cup rolled gluten free oats. I gave that a quick few rounds of mixes just to get the banana blended in with the oats.

Next I added 1/8 cup of goji berries

1/8 cup of diced walnuts

1/8 cup of hemp seeds

1/ tablespoon of cacao powder

1 teaspoon of vanilla and

1/2 teaspoon of salt.

The last thing I did was give it a few more rounds in my mixer to make sure all the ingredients were mixed up good. (The batter is a little goey but that is ok) Next I placed small scoops of the batter in a prepared mini muffin tray. I placed the mini muffin tray in a 350 degree oven for about 10 minutes.  Super easy and super good for you and SUPER GOOD.

You could add chocolate chips, any dried fruit you prefer, chia seeds, almonds, cashews, the variations are endless. If you wanted a sweeter tasting treat you could add some diced dates as well.
