Have you ever craved something and you just have no idea why? Today I was craving a rice crispy treat for some odd reason.  You know those marshmallow not so good for you squares.  The ones after about two bites make you feel like you want to throw up, yes those.  Well of course I was never going to make one of those wicked things so I got to creating in the kitchen.  I think these came out pretty good. Now get your mind off those marshmallow guys because these are not anywhere near the same but they are darn right yummy and I did not want to throw up after eating one.

21 Day Fix Millet Squares

3 Cups Puffed Millet ( You can get this at pretty much any health food store or here on Amazon)

1/4 Cup Almond Butter

1/4 Cup Honey

1 TSP Hemp Seeds

2 Tsp Raw Pumpkin Seeds

3 Tablespoons Goji Berries or any other dried fruit (no added sugar ones though)

4 Tsp Cacao Powder

1/4 Cup Dark Chocolate Chips (optional)

In a small saucepan melt the almond butter and honey till well blended. Make sure you stir it so it does not burn the bottom of the pan. Once blended set aside and stir in the cacao powder and take it off the heat.  Next get a big mixing bowl.  In the mixing bowl add the millet and goji berries. Lastly add the almond butter/honey/cacao powder mix into the mixing bowl and stir till all of the millet is coated.

Get an 8 X 8 glass square pan and line it with parchment paper. Fold the millet mixture into the pan and press down hard so the squares are all crunched together. This can be crumbly so we really want to pack the mixture down hard. If you are adding chocolate chips make sure you add them before you put the mixture into the pan. (those little guys do not stick very well)

Place in the refrigerator for at least an hour before you cut them. If you are on the 21 Day Fix you are going to want to cut the bars small bars- You should yield about 24 bars.
