2 Ingredient Ice-Cream never tasted so good. Today I was REALLY and I mean REALLY craving something sweet. I tried an apple and that did not work, I tried water with strawberries AND  I even tried eating a few dark chocolate chips. Have you ever had one of those times when nothing seems to satisfy that nagging need for sweetness? I finally decided to try making some eat clean ice- cream.  When I want to make eat clean ice-cream I usually pull out my Yonanas Maker  but at this point I was so ready to just satisfy this craving I took the quick and easy way. In the long run the results are the same I think anyway, one is just much quicker.

Here is all I did:

2 Ingredient Ice-Cream

Ingredients

1 pack of Acai Superfruit packs

1/2 of a Frozen Banana

Directions

Place both of the ingredients in your small blender and mix till you get an ice-cream like texture (it does not make not very much so you do not want to use a big blender or the ice-cream will get lost) I use this one. You do not want to over mix it. It is important to use a frozen banana as this will help with the creamy texture.

I topped off this beautiful treat with some of my favorite homemade gluten free granola.

Homemade Gluten Free Granola

Ingredients

1 Cup of Gluten Free Rolled Oats ( I use the one from Trader Joe’s)

1/2 Cup of Shelled Sunflower Seeds ( You can use any seeds you want)

1/4 Cup of Hemp Seeds

1/2 Cup of Walnut Pieces ( You can use any nuts you want)

1/2 Cup of Unsweetened Shredded Coconut

2 Tablespoons of Organic Maple Syrup. ( I use the one from Costco)

Optional Dried Fruit ( Make sure it is the kind that does not have ANY added sugar)

Here is another one of my favorite granola recipes.

Directions

Preheat your oven to 400 degrees. Line a deep dish cookie sheet with parchment paper. Place all of the ingredients on the parchment paper minus the maple syrup. ( If you are adding any dried fruit do not put it on the sheet yet) Mix all the ingredients together. Next spread the Maple Syrup on the mixture and mix it together with your hands. It is really important you coat as much of the mixture as you can. Place the granola in your oven and stir it after 10 minutes. After another 10 minutes it should be nice and golden which is my favorite granola color.  You can also not cook this if you want to have raw granola but I think this is hard on the digestive system this way. Once it is nice and pretty take it out and after it is cooled down then you can add in your dried fruit or dark chocolate chips if you are feeling naughty 🙂

Store your granola in an air tight container. OMG is this treat good or what?????????????
