Grain Free Zucchini Bread is one of my favorite sweet breads. I say sweet but it really is not sweet, there is very little honey in it which is a score in my house. I just returned from an 8 day intensive training in beautiful Sedona AZ and I was itching to get in the kitchen. (I will be doing a blog post on this soon so I do not want to leak any of the yummy details about this yet) 

Mike knew I was going crazy not being in the kitchen for 8 days so he stocked the refrigerator and pantry so I could get busy the moment I returned. When he went to the farmer’s market he picked out the most beautiful zucchini I have every seen and I knew without a doubt it was time to bake some bread. Zucchini Bread is so yummy and zucchini is super low in calories and high in folate and vitamin C. This bread is kind of sweet and savory at the same time which is why I think I love it so much. I tend to not use the same recipe twice when I bake bread because I like to just use whatever is in my refrigerator and pantry but this recipe is a go to for me everytime. This is one of the only breads that I do not add dark chocolate too which does not make Mike happy. I am not a fan of dark chocolate and zucchini together for some reason lol. There are plenty of other things you can add into this bread recipe to spice it up if you want. Some of my favorites are unsweetened coconut, dried apricots, fresh persimmons and diced walnuts. Get creative and just remember when you are in the kitchen you are the queen (or king). The kitchen is your kingdom and you can make the rules. Do not put barriers up to your creativity. Get dirty and have fun.

Ingredients

Instructions
  1. Pre- heat the oven to 340 degrees. Line a loaf pan with parchment paper or you can use a muffin tin ( makes approx. 11 muffins )

  2. Mix all of the dry ingredients together first and set aside

  3. Place the honey, dates, banana and eggs in a food mixer and beat till frothy. This usually takes about 2-3 minutes. Add in the zucchini and mix again till everything is well incorporated

  4. Once everything is well mixed spoon it into your loaf pan or muffin tin. If you are looking for variety and feeling wild and crazy you can top this bread with some unsweetened coconut or maybe some of your favorite crushed nuts. I love adding walnuts
  5. Place in your preheated oven for approx. 35-45 minutes. All ovens vary in temperature control so make sure and do the toothpick test. ( place the toothpick in the middle of the bread and if it comes out clean then it is ready, if not add a few more minutes)
Recipe Notes

This is a very moist bread so make sure and really try and pat your zucchini in a towel before adding it into the recipe. In addition, do not under bake the bread, it can be very moist. Lastly make sure and let it sit for about 15 minutes before trying to take it out of the pan. This will help the bread to set and not sink in the middle.
